New burdock…2 pieces (120grams)
Potato…1 piece (100grams)
Onion…1/2 piece (150 grams)
Boiled soup…500cc
Sake lees...50 grams
Cane sugar…1 tablespoon
Salt…appropriate amount
Mitsuba stem…appropriate amount

Sake lees using new burdock

【How to make】
①Wash the burdock  thoroughly and cut it into thin slices diagonally.
②Cut the potatoes into small pieces and the onion into thin slices.
③Put ① and ② into a pot, add water until it's just covered, turn on medium heat, and simmer until the burdock is soft. Separate some of the burdock  for decoration.
④Once the rough heat from step ③ is removed, mix it with a mixer until smooth.
⑤Return the boiled soup and ④ to the pot, and while melting the sake lees, add the cane sugar, heat, and season with salt.
⑥Pour ⑤ into a bowl, top with the reserved burdock for decoration, and add the finely cut mitsuba stems.

This vegetable soup uses the flavor of burdock  without using dashi or bouillon, and is enriched with sake lees.
