【Materials】 (For 2 people)
New burdock…80 grams
Onion...80 grams
Mitsuba…20 grams
Rice vinegar...4 tablespoons
Honey…1.5 tablespoons
Salt…two pinches
black pepper...a little

【How to make】
①Wash the new burdock, cut it diagonally into thin slices, add 1 tablespoon of vinegar (not listed) to boiling water and boil until it remains firm, then drain and cool.
②Thinly slice the onion and cut the mitsuba into 3cm long pieces.
③Refrigerate ① and ②.
④Add rice vinegar, honey, salt, and black pepper to a bowl, mix together, mix ① and ②, and serve in a plate.

The scent of new burdock and mitsuba go well together, making this a Japanese-style salad that is recommended only for this season.
