【Materials】 (For 2 people)
New burdock…1 piece (50grams)
Chicken mince…160grams
Ginger…5 grams
Potato starch…1 tablespoon
Salt...a pinch
Sake…1/2 tablespoon
cake flour…appropriate amount
Egg…1/2 piece
Bread crumbs…appropriate amount
Sunny lettuce…appropriate amount
Red radish…appropriate amount
Sauce...as you like

【How to make】
①Wash the new burdock thoroughly and chop it finely.
②Add minced chicken, grated ginger, potato starch, salt, and sake to a bowl, mix well, and then divide into 4 equal parts and roll into oval shapes.
③Dip ② into flour, beaten egg, and bread crumbs in that order, and shape.
④Fry ③ in vegetable oil heated to 180 degrees, cut in half and place on a plate.
⑤Add salad as garnish and sauce.
【point】
Minced cutlets with the scent of fresh burdock are a specialty of this season. The texture of the new burdock also adds an accent.
