Soba(Buckwheat noodles)...180grams
Cucumber…2 pieces
Daikon(Japanese white radish)…30grams
Inflorescence of shiso(perilla)…2 pieces
Mentsuyu(noodle soup base)…80cc

Soba salad with cucumber

【How to make】
①Boil the chicken tenders in boiling water and fluff them with your hands.
②Grate one cucumber, cut the rest diagonally, and then finely chop.
③Grate the daikon radish and squeeze out the water along with the grated cucumber from ②.
④Boil the soba noodles in boiling water, then rinse with cold water and drain.
⑤Place 2/3 of the thinly sliced cucumber from ② in the center of the bowl, and place the soba noodles on top.
⑥Place ① , ③ and the rest of the thinly sliced cucumber on top of ⑤, add the inflorescence of perilla, and pour over the mentsuyu.
