【Materials】 (For 2 people)
Enoki mushrooms…90 grams
Lettuce…60 grams Firm tofu...80 grams
Lemon…½ piece (squeezed) and ½ piece (for garnish)
Salt koji…6 grams
Extra virgin olive oil…4 teaspoons
Salt…Appropriate amount
Pepper…Appropriate amount

【How to make】
①Remove the stems from the enoki mushrooms, deep fry them in 170 degree oil (not included in the recipe), then drain. ②Cut the firm tofu into 6 equal pieces, and wipe the moisture off them with paper towels, and then spread with salt koji with spoon. ③Mix the lemon juice and extra virgin olive oil in a bowl.
④Place washed and drained lettuce in a bowl, then top with ①.
⑤Pour ③ on top, and sprinkle with salt and pepper to taste, and garnish with cut lemon.
【Points】
A simple salad with crispy fried enoki mushrooms. This is a refreshing salad with the flavors of lemon and shio koji.
