【Materials】 (For 2 people)
Rape blossoms…½ bunch (75 grams)
Baby scallops…6 pieces
Pomelo…½ piece (40 grams)
Rice vinegar…1 tablespoon
Cane sugar…1 tablespoon
White miso…8 grams

【How to make】
① Blanch the rape blossoms in boiling water, rinse and squeeze out the water.
② Blanch the baby scallops briefly as well.
③ Peel the pomelo and cut each into 2-3 pieces.
④ Mix rice vinegar, cane sugar and white miso in a bowl and mix well.
⑤ Just before serving, mix ①, ② and ③ with ④ and serve on a plate.
【Points】
The bitter rape blossoms, sweet scallops and fruity acidity of the pomelo combine to make a very satisfying dish. The rape blossoms will release moisture, so mix them quickly just before serving.
