Okra...80grams
Salt...1/2 teaspoon
Salt koji...50grams
Cane sugar...10g
Rice vinegar...1/2 teaspoon Chili threads (for decoration) ...as you like

【How to make】
①Blanch the okra in boiling water and then transfer to cold water (be careful not to boil it).
②Drain ①, sprinkle with salt and let sit for a while.
③Mix together the salt koji, brown sugar, and rice vinegar.
④Quickly rinse ② with water and wipe off the water with kitchen paper, then soak in ③ and let sit.
【Point】
To bring out the beautiful color of the okra and keep it crisp, quickly dip it in boiling water. Even though it's a pickle, it's not suitable for making in advance, so make it whenever you need it.
