【Materials】 (For 2 people)
Lotus root…100 grams
Shimeji mushrooms…50 grams
Maitake mushrooms…50 grams
Dashi…500cc
Sake…1 tablespoon
Soy sauce…1 teaspoon
Salt…Appropriate amount
Green onions…Appropriate amount

【How to make】
①Grate the lotus root with a box grater.
②Divide the shimeji and maitake mushrooms into bite-sized pieces.
③Put the stock in a pot and heat over medium heat, add ① and warm.
④When it boils, add ② and quickly cook through, then add sake, soy sauce and salt and turn off the heat.
⑤Place in a bowl and top with finely chopped green onions.
【Points】
This is a pureed soup that makes use of the starchy viscosity of the lotus root. Pair it with mushrooms to enjoy the rich flavor of autumn.
