【Materials】 (For 2 people)
Shiitake mushrooms…70 grams
Green onion…100 grams
Olive oil...1 teaspoon
Rice vinegar…100 milliliters
Cane sugar…4 tablespoons
Salt…A pinch
Red chili…1 stalk
Dill…3 sprigs

【How to make】
①Remove the stems from the shiitake mushrooms and cut them into quarters, and cut the green onions into 4cm lengths.
②Put olive oil in a frying pan and fry ①. Lightly sear the shiitake mushrooms and fry the green onions until they are slightly browned, then place them in a clean jar and add the dill and red chili.
③Put the rice vinegar, cane sugar, and salt in a small saucepan and heat over medium heat. Once it starts to boil, turn off the heat and pour into ②.
④Once it has cooled down, put a lid on the jar and leave in the refrigerator for half a day.
【Points】
It's recommended to make this in advance when you have leftover ingredients from the hot pot. The dill makes a gentle palate cleanser.
