【Materials】 (For 2 people)
Shiitake mushrooms…80 grams
Eggs…3 pieces
Basil…2 sprigs (3 grams)
Salt…3 pinches
Olive oil…1 tablespoon
【How to make】
①Remove the stems from the shiitake mushrooms and cut them into equal parts radially.
②Tear the basil leaves with your hands.
③Heat 1 teaspoon of olive oil in a frying pan over medium heat, add the shiitake mushrooms and a pinch of salt, stir fry quickly and remove from the frying pan.
④Beat the eggs, add 2 pinches of salt and mix.
⑤Add the remaining olive oil to a frying pan and heat over medium heat. Add ④ and when it is slightly cooked, mix with chopsticks, place ③ and ② on top horizontally and use a spatula to roll the egg from both sides towards the center.
⑥Bring the frying pan close to a plate and flip it over to place ⑤. Garnish with basil leaves (not included in recipe) on top.
