【Materials】 (For 2 people)
Shiitake mushrooms…30 grams
Sea bream sashimi…4 slices
Rice…2 bowls
Dashi…400cc Salt...to taste
Sudachi…As desired

【How to make】
①Remove the stems from the shiitake mushrooms, slice them thinly, spread them on a colander, and dry them in the sun for 2 hours.
②Place warm rice in a bowl and top with sea bream sashimi.
③Heat the dashi in a pot, add ①, and cook briefly, then add salt to taste.
④Pour ③ over ②, grate the peel of the sudachi on top, and garnish with sliced sudachi.
【Points】
Drying shiitake mushrooms can increase the amount of vitamin D, which regulates immune function. Semi-dried shiitake mushrooms and sea bream make for a delicious ochazuke. The sudachi adds a refreshing finish.
