Japanese-style shimeji and taro croquettes

【How to make】
①Peel the taro, steam it in a steamer, and mash it with the back of a fork while it's still hot.
②Finely chop the shimeji mushrooms.
③Thinly slice the green shiso leaves, and finely pound the umeboshi plums with a knife.
④Mix ①, ②, and ③ in a bowl, then divide into 8 portions and roll them into balls.
⑤Coat ④ with potato starch, beaten egg, and breadcrumbs, in that order.
⑥Deep fry ⑤ in oil heated to 170°C until golden brown.

【Points】
A gentle taro croquette with a delicious, sticky texture thanks to the flavor of shimeji mushrooms. It also contains plum paste for a Japanese-style flavor.
