Chicken breast…1 piece
Salt…½ teaspoon
Sake…1 tablespoon
Water…100cc
Shimeji mushroom…½ bunch
Chinese chives…½ bunch
Ginger…5 grams
Sake…1 tablespoon
Mirin…1 tablespoon
Soy sauce…1 tablespoon
Salt…appropriate amount

Steamed Chicken with Shimeji Mushroom Sauce

【How to make】
①Remove the skin from the chicken breast, sprinkle with sake and let sit for a while.
②Put ① and water in a frying pan, cover and heat over medium heat. Once it's steaming, reduce heat to low and steam for about 6 minutes, then turn off the heat and leave to steam for about 5 minutes.                                                
③Blanch the shimeji mushrooms in boiling water, drain and finely chop them.                            ④Cut the Chinese chives into 1cm pieces and finely chop the ginger.
⑤Put ③ and ④ in a bowl, add sake, mirin, and soy sauce, mix and add salt to taste.
⑥Slice ② and place on a plate.
⑦Pour on ⑤.
