【Materials】 (For 2 people)
Chestnuts…70 grams (peeled)
Chicken liver…180 grams
Soy milk (or cow's milk)…Appropriate amount
Red wine…3 tablespoons
Cane sugar…1 tablespoon
Soy sauce…1 tablespoon
Mirin…1 tablespoon
Rosemary…Appropriate amount

【How to make】
①Soak chestnuts in hot water and peel off the outer shell, as well as the inner skin.
②Boil ① in boiling water for 3-5 minutes depending on size until slightly firm.
③Remove excess fat and blood from chicken liver, cut into bite-sized pieces, soak in soy milk for about 10 minutes, then drain.
④Put ③ in a frying pan and heat over medium heat. When the chicken liver changes color, add red wine, cane sugar, soy sauce, and mirin and bring to a boil. After that, reduce heat to low and simmer until the water is reduced, add ② and mix with the broth.
⑤Serve in a bowl and garnish with rosemary.
