【Materials】 (For 2 people)
Komatsuna(Japanese mustard spinach)…100 grams
Yamaimo (Japanese yam)…200 grams
Silken tofu…80 grams
Dashi…1 tablespoon
Mirin…1 tablespoon
Cane sugar…1 teaspoon
Soy sauce…1 teaspoon

【How to make】
① Cut the komatsuna into 4cm lengths.
② Grate the yam.
③ Place the lightly drained tofu and step 1 in a heat-resistant container and pour over step 2.
④ Mix the dashi, mirin, cane sugar, and soy sauce together and pour over step 3.
⑤ Cook in a toaster oven or on a grill until the surface of the yam is browned.
【Points】
The combination of yam and tofu gives it a gentle finish that isn't too heavy. You can sprinkle on some chopped nori or ground sesame seeds to add some accent if you like.
