Cauliflower rice and salmon sake lees risotto

【How to make】
① Cut the salmon in half.
② Put the sake lees in a small saucepan, add a small amount of dashi (50cc), and mix over low heat until smooth.
③ Finely chop the cauliflower to make cauliflower rice, and finely chop the onion.
④ Heat olive oil in a frying pan over medium heat, add the onion and fry until transparent, quickly sear ① on both sides, add the sake and let the alcohol evaporate. Remove the salmon for now.
⑤ Add ③ to ④, quickly stir fry the whole, and while gradually adding the remaining dashi, reduce until the cauliflower rice is soft.
⑥ Add ②, mix well, season with salt and pepper, return the salmon from ④, and heat the whole.
⑦ Place ⑥ in a bowl and top with Japanese parsley.
