【Materials】 (For 2 people)
Spinach…1 bunch
Eggs…2
Sesame oil…1 tablespoon
Dashi…200cc
Soy sauce…1 tablespoon
Mirin…1 tablespoon
Sake…1 tablespoon
Salt…2 pinches
Potato starch…1 tablespoon
Water…2 tablespoons
White sesame…Appropriate amount(optional)
Ginger…Appropriate amount(optional)

【How to make】
① Boil water in a pot, quickly boil the spinach, transfer to cold water, squeeze out the water thoroughly, and cut into 5cm lengths.
② Crack the eggs into a bowl and lightly beat them.
③ Heat sesame oil in a frying pan over medium heat, add ① and beat it, pour in the eggs, and slowly turn the chopsticks to cook them gently, then remove from a serving dish.
④ Add dashi, soy sauce, mirin, sake, and salt to the frying pan from ③ and heat over medium heat. Once boiling, add water-dissolved potato starch little by little to thicken.
④ Pour ③ over ②, top with grated ginger if desired, and sprinkle with white sesame seeds.
【Points】
If you remove the eggs when they are about half-cooked, they will turn out fluffy. You can also pour them over warm rice.
