【Materials】 (For 2 people)
Boiled octopus…100 grams
Kujo green onion…1 stalk
Garlic…1 clove
Olive oil…100cc
Chilli pepper (sliced )…A little (to taste)
Salt…⅓ teaspoon
Soy sauce…1 teaspoon
Ground sansho pepper (to taste)…½ teaspoon
Black pepper…A little

【How to make】
① Cut the boiled octopus into bite-sized pieces.
② Slice the Kujo green onions diagonally.
③ Slice the garlic thinly.
④ Put the olive oil, garlic, and sliced chili peppers in a small pot and cook over low heat until the aroma comes out. When the aroma comes out, add ① and ②, and simmer over low heat until the octopus is plump.
⑤ Add soy sauce, salt, and powdered sansho pepper, mix lightly, turn off the heat, and finish by sprinkling black pepper.
⑥ Place ⑤ in a heat-resistant container and serve with baguettes, etc.
【Points】
A Japanese-style ajillo that combines the sweetness of the Kujo green onions and the umami of the octopus with the refreshing aroma of sansho pepper. If the octopus is overcooked it will toughen, so heat it over low heat slowly.
