Salt-grilled sea bream with Japanese pepper miso using new burdock

【How to make】
①Wash the new burdock thoroughly, cut it diagonally into thin shavings, add 1 tablespoon of vinegar (not listed) to boiling water, boil until it remains firm, then drain and cool.
②Mix Saikyo miso and sugar, then add ① and mix.
③Sprinkle salt on the seaweed, grill, and place on a plate.
④Place ② on top of ③, sprinkle with powdered Japanese pepper, and add the tree buds if you have them.

【point】
This salt-grilled sea bream dish is served with Saikyo miso that gently envelops the aroma of new burdock. This grilled fish is a little different from Saikyozuke.
