【Materials】 (For 2 people)
Kiwi fruit...1
Baby scallops...70g
Potato starch...as needed
Onion...30g
Carrot...20g
Rice vinegar...2 tablespoons
Cane sugar...3 tablespoons
Soy sauce...a little
Vegetable oil...as needed
Italian parsley (for garnish)...as needed

【How to make】
①Peel the kiwi fruit and cut it into quarters lengthwise, then cut it into 5mm-wide quarter-rounds.
②Slice the onion thinly and the carrot into strips.
③Mix rice vinegar, cane sugar, and soy sauce in a bowl.
④Coat the baby scallops in potato starch and fry in 180°C oil.
⑤Add ①, ②, and ④ to ③ and mix well.
⑥Place ⑤ on a plate and garnish with Italian parsley.
【Point】
You can marinate the baby scallops, but we recommend adding them just before serving for a crispier texture.
