Yuzu juice…20 grams

Boiled crown daisies and grilled scallops with yuzu marinade

【How to make】
①Boil the crown daisies, rinse in water, squeeze out the water and cut into 4cm lengths.
②Place the baby scallops on a grill and quickly sear both sides over a fire.
③Mix the cane sugar, shio koji and yuzu juice in a bowl, then add ① and ② and mix.
④Place ③ on a plate and top with shredded yuzu peel.
