【Materials】 (For 2 people)
Shogoin turnip…400 grams
Thick fried tofu…130 grams
Dashi…400cc
Yuzu pepper…1/2 teaspoon (optional)
Salt…Appropriate amount
Potato starch…1 tablespoon
Water…1 tablespoon
Green onion…Appropriate amount

【How to make】
① Peel the Shogoin turnip thickly and cut into 2cm-wide chrysanthemum-shaped pieces.
② Pour boiling water over the deep-fried tofu to remove excess oil, then cut into bite-sized pieces.
③ Put the dashi stock in a pot and place over medium heat. Add the Shogoin turnip and, once it has boiled, add the deep-fried tofu and simmer over low heat for about 5 minutes.
④ Season with yuzu pepper and salt.
⑤ Add water-dissolved potato starch and mix gently to thicken.
⑥ Place ⑤ in a bowl and top with finely chopped green onions.
【Points】
A warm dish that envelops the gently sweet Shogoin turnip and rich deep-fried tofu in yuzu pepper sauce. Add the yuzu pepper little by little, checking the taste and adjusting the spiciness to your liking.
