【Materials】 (For 2 people)
Spinach…1 bunch
Taro…4-5 medium sized ones (about 200 grams)
Mayonnaise…2 tablespoons
Soy sauce…1 teaspoon
Lemon juice…1 teaspoon
Sugar…½ teaspoon
Ground sesame…1 teaspoon
Black pepper…Appropriate amount
Lemon…Appropriate amount

【How to make】
① Quickly boil the spinach, stems first, in boiling water, then transfer to cold water, squeeze out the water, and cut into 4cm lengths.
② Peel the taro, cut into bite-sized pieces, sprinkle with salt (not included in the recipe) and rub lightly to remove any slime.
③ Boil water in a pot and boil the taro until soft. Once cooked, drain the water and mash with the back of a fork while still hot.
④ Mix mayonnaise, soy sauce, lemon juice, sugar, and ground sesame in a small bowl.
⑤ Add ③ to ④ and mix well, then add ① and toss quickly.
⑥ Place ⑤ in a bowl, sprinkle with black pepper, and garnish with sliced lemon if desired.
【Points】
This salad is accented by the crisp texture of the spinach against the creamy texture of the taro.
