Japanese-style potage with celery and potatoes

【How to make】
① Peel the potatoes and slice thinly.
② Remove the strings from the celery and slice thinly.
③ Add the stock to a pot, add the potatoes and celery, and simmer over medium heat until soft. Turn off the heat and let cool.
④ Blend ③ until smooth.
⑤ Return ④ to the pot, add the soy milk and Saikyo miso while dissolving and spreading them out, and heat over low heat without boiling, and add salt to taste.
⑥ Place in a bowl and top with chopped celery leaves that have been rubbed with salt (not included in the recipe).

【Points】
A Japanese-style potage with a gentle celery flavor. Soy milk tends to separate when boiled, so heat slowly over low heat.
