【Materials】 (For 2 people)
Eggplant…2 pieces
Squid (sword tip) for sashimi…1 pack
Green yuzu…1 piece
Sesame oil…1 tablespoon
Salt…appropriate amount

【How to make】
①Grill the eggplant with the skin on over an open flame. When the skin is completely charred, place in cold water and peel with your fingers.
②Wipe the water off ① with paper towel, and cut each half into quarters.
③Slice the squid into thin slices and toss with sesame oil and salt.
④Place ② and ③ on a plate and keep in the refrigerator to chill.
⑤Sprinkle grated green yuzu on top just before serving.
【Points】
Grill the eggplant over an open flame until the skin is charred black, then immediately remove from the oven in cold water to make it easier to peel. This is a slightly different kind of grilled eggplant from the ginger soy sauce version.
