【How to make】
①Remove the stem of the eggplant and cut it into large chunks.
②Peel the Japanese yam and cut it into chunks.
③Cut the Japanese ginger into thin strips.
④Put the cane sugar, mirin, sake, and soy sauce in a pot and bring to a boil over medium heat.
⑤Deep fry ① and ② in oil heated to 170 degrees, then add to ④ and mix well.
⑥Place ⑤ on a plate and garnish with ③.
