Eggplant miso noodles

【How to make】
①Cut the eggplant into 1cm cubes.
②Heat sesame oil in a frying pan over medium heat, add the ground pork and stir fry until the meat changes color, then add ① and stir fry further.
③Add cane sugar, mirin, and miso and stir fry further, then season with salt.
④Boil the somen noodles in boiling water for about 1 minute, remove from the pot and coat with sesame oil.
⑤Place ④ in a bowl, place ③ on top, and sprinkle with finely chopped green onions and shichimi pepper to taste.

I used somen noodles, which tend to stick to the meat. Serve with rich eggplant miso.
