【Materials】 (For 2 people)
Eggplant…1 piece
Chicken tender…1 piece
Tomatoes (Mid-size)…3 pieces
Rice vinegar…2 tablespoons
Cane sugar…1 tablespoon
Soy sauce…1 teaspoon
Olive oil…1 tablespoon
Small mitsuba…appropriate amount

【How to make】
①Remove the stem of the eggplant, cut it in half lengthwise, then cut it into 5mm thick pieces and grill both sides until browned.
②Boil the chicken tenders in boiling water, then transfer to cold water, drain, and break them up with your hands and divide them into small portions.
③Cut the tomatoes into quarters.
④Mix rice vinegar, cane sugar, soy sauce, and olive oil in a bowl.
⑤Add ①, ②, and ③ to ④ and mix.
⑥Place ⑤ on a plate and garnish with mitsuba.
【Points】
The juiciness of the tomatoes adds to the eggplant, and the addition of chicken tenders makes for a filling yet healthy dish. This is also recommended for those times when you just want a salad.
