Sweet potato…80 grams
Saury…2
Ginger…10 grams
Sake…50cc
Mirin…50cc
Soy sauce…50cc
Cane sugar…1 tablespoon

Simmered saury with sweet potato and ginger

【How to make】
①Cut the sweet potato into 2cm slices, then cut into quarters and steam until a bamboo skewer can be pierced.
②Remove the head and guts from the saury and cut into thirds in a cylindrical shape.
③Peel the ginger and slice it thinly.
④Put sake, mirin, soy sauce and cane sugar in a pot and bring to a boil over medium heat. When it boils, add ② and ③, and boil quickly, then remove from the pot and place on the plate. Reduce the broth a little.
⑤Place ① in the plate from ④ and pour the broth over it.
