Glass noodles…30 grams
Mitsuba…10 grams
Rice vinegar…4 tablespoons
Cane sugar…3 tablespoons
Chili pepper…1 stick
Salt…2 pinches

Boiled Shimeji mushrooms and Glass noodles with sweet and sour sauce

【How to make】
①Remove the stems from the shimeji mushrooms and separate them into appropriate portions.
②Add rice vinegar, cane sugar, chili pepper, and salt to a bowl and mix.
③Boil water in a small pot, quickly boil ①, then remove it from the water and add it to ②.
④Turn off the heat of ③ and soak the glass noodles in the hot water to return it to its original state.
⑤Once ④ has returned to its original state, drain it in a colander, let it cool slightly, and add it to ②.
⑥Add the stems of mitsuba chopped into 2cm lengths to ⑤, mix, serve on a plate, and garnish with mitsuba leaves.
