③Boil water in a small pot, quickly boil ①, then remove it from the water and add it to ②.
④Turn off the heat of ③ and soak the glass noodles in the hot water to return it to its original state.
⑤Once ④ has returned to its original state, drain it in a colander, let it cool slightly, and add it to ②.
⑥Add the stems of mitsuba chopped into 2cm lengths to ⑤, mix, serve on a plate, and garnish with mitsuba leaves.
【Points】
This glass noodles salad is accented by the texture of the shimeji mushrooms. Adding mitsuba gives it a Japanese taste, but you can also add coriander to create an ethnic dish.
