【Materials】 (For 2 people)
Chestnuts…100grams (peeled)
Leftover water from boiled chestnut…200cc
Onion…60 grams
Butter…10 grams
Soy milk…200cc
Salt Koji…1 teaspoon
Cane sugar…2 teaspoons
Honey…1 teaspoon
Salt…Appropriate amount Italian parsley...Appropriate amount

【How to make】
①Soak chestnuts in hot water and peel off the outer shell and the inner skin.
②Boil ① in boiling water until soft. Save the cooking water. Set aside some boiled chestnuts for decoration.
③Thinly slice the onion.
④Heat butter in a frying pan over medium heat and fry ③ until it is just about to turn color.
⑤Combine ②, the cooking water, soy milk, and ④ and blend until smooth in a mixer or blender. Put in a pot over medium heat, add salt koji, cane sugar, honey, and finally season with salt.
⑥Pour ⑤ into a bowl and garnish with the chestnuts from ② and parsley.
【Points】
I made this without using bouillon to bring out the flavor of the chestnuts. I added umami seasonings such as butter and salt koji to add depth to the flavor. Depending on the sweetness of the chestnuts, you can adjust the amount of seasonings.
