【Materials】 (For 2 people)
Enoki mushrooms…180 grams
Broken yuba (dried)…10 grams
Dashi…400cc
Salt…Appropriate amount (2-3 pinches)
Soy sauce…1 teaspoon
Potato starch…2 tablespoons
Water…2 tablespoons
Rice…2 bowls
Japanese parsley…Appropriate amount

【How to make】
①Cut off the stems of the enoki mushrooms, cut them in half lengthwise and break them into pieces.
②Bring the dashi to a boil over medium heat, add ① and the broken yuba, and then add soy sauce.
③Add the water-dissolved potato starch while stirring ②. Season with salt, and when it thickens, turn off the heat.
④Put warm rice in a bowl, pour ③ over it, and garnish with Japanese parsley.
