【Materials】 (For 2 people)
Jerusalem artichoke…100 grams
Broccoli…80 grams
Yuzu…2 grams
Rice vinegar…3 tablespoons
Cane sugar…1½ tablespoons
Salt…A pinch
Olive oil…1 tablespoon

【How to make】
① Wash the Jerusalem artichoke thoroughly and cut it into 1.5cm pieces with the skin on.
② Boil the broccoli in boiling water until it is slightly firm.
③ Deep fry ① in 170°C oil until a bamboo skewer can be pierced easily.
④ Finely chop the yuzu peel.
⑤ Mix rice vinegar, cane sugar, salt, olive oil and ④.
⑥ Place ② and ③ in a bowl and pour ⑤ over it.
【Points】
Jerusalem artichoke contains a lot of water, so be sure to wipe off any excess water before frying. Fry slowly to create a fluffy texture.
