Kujo green onion…40 grams (1 piece)
Chicken thigh…200 grams
Dashi stock…400cc
Sake…1 tablespoon
Soy sauce…½ teaspoon

Yuzu…Appropriate amount

Chicken and Shogoin turnip grated soup

【How to make】
① Peel the Shogoin turnip thickly and grate it.
② Slice the Kujo leek diagonally.
③ Cut the chicken thighs into bite-sized pieces.
④ Put the soup stock in a pot and heat over medium heat. When it boils, add ③ and simmer over low heat for about 5 minutes while skimming off the scum.
⑤ Add sake and ① to ④ and bring to a boil, add ② and quickly cook through, add soy sauce and season with salt.
⑥ Place ⑤ in a bowl and finish by shaving some yuzu peel on top.

A gentle-tasting soup where the flavor of the chicken and the sweetness of the Shogoin turnip blend together. Add the Kujo leek at the end to preserve its flavor.
