
【Materials】 (For 2 people)
Potatoes…2 pieces (280 grams)
Asparagus…4 pieces
Rice flour…80g
Egg yolk…2 pieces
Salt...1/2 teaspoon
Butter…2 tablespoons
Soy sauce...2 teaspoons
Black pepper…appropriate amount
【How to make】
①Peel the 5cm part from the root of the asparagus, and cut it diagonally into thirds. ②Boil the potatoes, peel them, and mash them thoroughly with the back of a fork.
③Add the rice flour, egg yolk, and salt to ② and mix in a cutting motion. Once the flour has penetrated into the dough, combine it with your hands. Roll it out into a thin strip on a floured surface (not listed above/appropriate amount) and cut into 2cm lengths.
④ Boil plenty of water in a pot, add the gnocchi from ③, and when they start to float, take them out and drain them.
⑤ Add the butter to a frying pan and heat over medium heat. When it melts and turns golden brown, add the gnocchi and asparagus and mix with the butter, then add the soy sauce and mix.
⑥Place ⑤ on a plate and sprinkle with black pepper.

The contrast between the chewy texture of the gnocchi and the crispness of the asparagus adds to the deliciousness.
