"Karashi-nishin miso," a homemade dish beloved in the homes of Ide Town, Kyoto Prefecture, during the early Showa period, has been revived as a local specialty. It was created by Ide Town Development, which operates the community center "Teo Terrace Ide" (Ide, Ide Town, Kyoto Prefecture), and is available for purchase at the facility. The sweet herring is complemented by a moderate spiciness, making it a perfect pairing with rice.

Miso, made by simmering chopped green chilies, herring, and seasonings, was a popular dish on local dinner tables. With few people left who know how to make it, the company undertook a revival last year as part of Ide Town's Specialty Product Development Project, hoping to preserve this unique home-style flavor.
Prototypes were sampled by visitors to the facility, and feedback was collected from approximately 100 people, aiming for a flavor that would be enjoyed by people of all ages. It's recommended as a dipping sauce for cucumbers or as a rice ball filling. This is the first in a planned series called "Nostalgic Ide Flavors."
