【Materials】 (For 2 people)
Carrots…100 grams
Salt…2 pinches
Egg white…1 egg
Cod…2 slices
Dashi…200cc
Mirin…2 tablespoons
Soy sauce…1 teaspoon
Salt…2 pinches
Sudachi peel…Appropriate amount Potato starch...1 tablespoon Water...1 tablespoon

【How to make】
①Grate the carrots and lightly squeeze out the water.
②Beat the egg whites with a whisk until stiff peaks form.
③Mix ① and ② with salt.
④Sprinkle sake (not included in recipe,appropriate amount) over the cod and place it in a bowl, then place ③ on top and steam in a steamer with steam rising for about 10 minutes.
⑤Add dashi, mirin, soy sauce and salt to a pot and bring to a boil over medium heat. When it starts to boil, add potato starch with water to thicken.
⑥Pour ⑤ over ④ and sprinkle on some grated sudachi peel.
【Points】
A dish that brings out the sweetness and flavor of carrots. Carrots also go well with the aroma of citrus fruits. I used sudachi this time, but you can use any citrus fruit you like, such as yuzu.
