【Materials】 (For 2 people)
Onion…40 grams
Celery…15 grams of leaves and 45 grams of stems
Salmon…2 slices
Salt…Appropriate amount
Lemon juice…1 tablespoon
Rice vinegar…1 tablespoon
Cane sugar…2 teaspoons
Salt…2 pinches
Olive oil…1 tablespoon
Lemon (sliced)…2 slices

【How to make】
① Finely chop the onion.
② Finely chop the celery stalk and leaves.
③ Sprinkle a little salt on the salmon, let it sit for about 5 minutes, then wipe off the water.
④ Add lemon juice, rice vinegar, cane sugar, and salt to a bowl and mix well.
⑤ Add ① and ② to ④, mix well and let sit for a while.
⑥ Heat olive oil in a frying pan over medium heat, and fry ③ until well browned on both sides.
⑦ Place ⑥ on a plate and top with plenty of ⑤.
⑧ Garnish with lemon slices.
【Points】
The refreshing flavor of celery goes well with the umami of salmon. Using the leaves gives the celery a deeper flavor.
